Roasted Sweet Potatoes

Ingredients

3 large sweet potatoes
Extra-virgin olive oil, for drizzling
Sea salt and freshly ground black pepper
Optional seasonings:
½ teaspoon paprika
½ teaspoon ground cumin
½ teaspoon garlic powder

Instructions

Preheat the oven to 425°F and line baking sheets with parchment paper.
Peel and cut the sweet potatoes into cubes, trying to keep each piece roughly the same size for even cooking.
Toss the sweet potatoes with olive oil, salt, pepper, and the optional seasonings (if using) until evenly coated.
Spread them out in a single layer on the baking sheet(s).
Roast for 22–25 minutes, stirring once halfway through, until tender and the edges are nicely browned.
