Protein Packed Cottage Cheese Queso Dip

Ingredients
½ lb lean ground beef (93–96%)
½ tsp salt
2 cups fat-free or 2% cottage cheese
½ cup shredded Monterey Jack cheese
½ cup shredded Mexican cheese blend
2 tbsp taco seasoning (Bettergoods from Walmart or Siete brand)
½ cup water
4.5 oz can diced green chiles
Instructions
- Heat a skillet over medium heat and cook the ground beef with the salt until fully browned and no longer pink. Drain excess grease and set aside.
- Add the cottage cheese, Monterey Jack cheese, Mexican cheese blend, taco seasoning, and water to a blender or food processor.
- Blend on high for about 30 seconds, or until well-blended.
- Pour the blended mixture into a medium microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until hot and creamy. This should take about 2 minutes total, or less.
- Stir in the cooked ground beef and diced green chiles until well combined.
Serve warm with your favorite tortilla chips or fresh veggies and enjoy!
