Protein Packed Cottage Cheese Queso Dip

Ingredients


½ lb lean ground beef (93–96%)
½ tsp salt
2 cups fat-free or 2% cottage cheese
½ cup shredded Monterey Jack cheese
½ cup shredded Mexican cheese blend
2 tbsp taco seasoning (Bettergoods from Walmart or Siete brand)
½ cup water
4.5 oz can diced green chiles

Instructions

  1. Heat a skillet over medium heat and cook the ground beef with the salt until fully browned and no longer pink. Drain excess grease and set aside.
  2. Add the cottage cheese, Monterey Jack cheese, Mexican cheese blend, taco seasoning, and water to a blender or food processor.
  3. Blend on high for about 30 seconds, or until well-blended.
  4. Pour the blended mixture into a medium microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until hot and creamy. This should take about 2 minutes total, or less.
  5. Stir in the cooked ground beef and diced green chiles until well combined.

Serve warm with your favorite tortilla chips or fresh veggies and enjoy!
